Classification and fishing area
Species: L. aurata
Euryhaline species (capable of withstanding variations in the degree of salinity of the water), migratory and catadromous (lives in fresh water and reproduces in salt water).
Its distribution area includes the entire Mediterranean Sea, the Black and Azov Seas and the European and African Atlantic coasts between southern Norway and the Cape Verde islands.
Its habitat is along the rocky coasts in the mouths and in the lagoons, like the other mullets, but it avoids too low salinity waters.

Purchase and conservation
Fishing seasonality: all year round, especially in the spring and autumn months.
The Lotregano Cefalo is characterized by firm, tasty and quite valuable meats, it is often found in our markets but is of reasonable interest, it is sold fresh, frozen, smoked and dried.
Use in the kitchen
Excellent in the oven and on the grill, if very fresh it is also excellent boiled, accompanied by mayonnaise.
It is cooked in foil, stuffed and flavored with a tomato-based dressing, breadcrumbs and white wine.
Season the fish in the belly with two slices of lemon, a sprig of rosemary, a pinch of salt and half a spoonful of extra virgin olive oil.
Make oblique incisions on both sides, prepare a sauce made of oil, salt, vinegar and pepper and brush the two sides of the mullet.
Place the fish in a pan and bake for half an hour, 15 minutes per side.
Serve with the remaining sauce.
