Production area and history

Pignoletto is the name of the autochthonous grape from which this unique, delicious and exclusive wine is obtained: it is rightly considered the Ré of the Colli Bolognesi. There are no precise and certain written documentation of this very particular grape, but wise and well-founded references, many !! Pliny the Elder in his Naturalis Historia, written in the first century AD, says of a wine called Pino Lieto which is not sweet enough to be good, and therefore not appreciated, since it is known that the ancient Romans loved sweet wine: from such affirmations it can be deduced that in ancient times Pignoletto was already known. Tanara, in 1654, with his treatise Citizen's Economy in Villa, makes precise references to Pignole grapes that are grown in the hills of the Bolognese province, although it has always been characterized as another grape with similar ampelography. Vines - Minimum alcoholic strength - Aging and qualifications

The wine with controlled and guaranteed denomination of origin "Colli Bolognesi Classico Pignoletto" must be obtained from grapes and coming from vineyards made up of at least 95% of the Pignoletto vine. Grapes of other vines suitable for cultivation in the Emilia-Romagna region present in the vineyards within the company, alone or together, up to a maximum of 5% can also contribute to the production of this wine.

The wine with denomination of controlled and guaranteed origin «Colli Bolognesi Classico Pignoletto» must meet the following characteristics:
- minimum total alcoholic strength by volume: 12.00% vol .;
- residual reducing sugars: maximum 6 g / l up to a total alcoholic strength by volume of 13.00% vol .; further 0.2 g / l of residual reducing sugars are allowed for every 0.10% vol. of total alcohol exceeding the total alcoholic strength by volume of 13.00% vol .;
- minimum total acidity: 4.5 g / l;
- minimum non-reducing extract: 16.0 g / l.

Organoleptic characteristics

The wine with denomination of controlled and guaranteed origin «Colli Bolognesi Classico Pignoletto» must meet the following characteristics:
- color: more or less intense straw yellow, with possible greenish reflections;
- smell: delicate, characteristic;
- flavor: fine, harmonious, characteristic.

Pairings and serving temperature

Excellent aperitif as it is fruity, delicate and light, it is perfect with Italian appetizers, fish and tigelle, vegetables and eggs. It is a whole meal, but above all with white meats and fresh cheeses that enhance its characteristics; with tortellini in broth it is a classic. Serving temperature: 8-10 ° C.
